I recently enjoyed a delightful vacation in St. James, Barbados. During my stay, I landed at Scarlet in Paynes Bay for dessert and ended up having a light dinner. With all the high end restaurants and extraordinary chefs in Barbados whose dishes were outstanding, the simple fare at Scarlet was most memorable!
So much so that I wanted their recipe for the Fish Pie they serve. Thank you for putting me in touch with Sophie at Scarlett. Now I can try the dish in my own kitchen!.
